boat day spicy raw zucchini and garbanzo salad
a boat usually consists of soggy Doritos, maybe some grilled Bubba Burgers and lots of Coronas or Rum & Cokes. I just can't do it anymore. A full day of drinking in the sun needs a little fresh food for some energy/seriously - why are we eating junk food in bikinis?! Let's get it together and next time you go on a boat day, whip up this quick vegan, raw and super tasty salad.

Boat Day Spicy, Raw Zucchini and Garbanzo Salad
(serves about 4 people, it's an easy recipe to double or triple though for a big regatta style boat day or as a dinner party/BBQ side dish)
1 1/2 cans of garbanzo beans
2 zucchinis, thinly sliced (use a mandolin if you have one, if not, try and make them thin, thin, thin, like paper thin)
1/4 red onion, sliced
juice of 4 lemons
the best quality sea salt that you can find (we got ours at Aragon 101, a great kitchen and home store in Coral Gables)
fresh cracked pepper
red pepper flakes
Boom, mix it all together and you got yourself a salad. I always go a little overboard with red pepper flakes - they're always spicier than I remember!
