The "Transport Yourself To A Resort" Meal

Food has the power to take us to far away places or at least pretend, for a few minutes, that we’re in a far away place. When I woke up wishing I was drinking a piña colada with fries I made soggy from my wrinkly pool fingers, there was nothing I could do but make this fast ceviche, a bag of frozen fries and pretend.

I tried to get Jazz to bring in the backyard hammocks to the living room (it was raining), but no luck. Because he’s a hater. And a reasonable person.

This is the easiest ceviche in the world. It took almost no work at all. I’d never made ceviche and I was worried it wouldn’t scratch my itch - but HELLO you don’t even have to cook it. It was delicious. Here’s what I put in it, because you know there wasn’t an actual “recipe.”

easy shrimp ceviche with classic cut fries

I woke up wishing I was at a cheesy beach resort and then made this meal.

defrosted shrimp, peeled and deveined, cut into three or four pieces each.

juice of two limes.

halved hearts of palms. (this is just a trick to bulk it up a bit, used a canned good that you’ve likely had waiting on a shelf, and save some shrimp for another meal).

mix that together in a bowl and let it sit while you cut up the following things into tiny pieces:

cucumber

onion

cilantro

sweet pepper (i used one from my garden, but i think a bell pepper would have done the trick)

salt


the shrimp will turn pink when it’s cooked in the lime juice
