How To Turn Weird Scraps Into A Meal

if you’ve seen Salt, Fat, Acid, Heat - you know how to put together a weird leftover lunch. Salt, fat, acid, heat - a little salt (maybe an anchovy instead?), fat (butter! ok, maybe olive oil), acid (a squeeze of lemon or a driz of vinegar) and heat (that might just be a microwave, that’s cool).

When working with weird leftovers or scraps that remain in a nearly empty fridge, it’s the perfect way to devise of a Willy Wonka-esque lunch - like this bowl with feta, over leftover rice with some asparagus and prosciutto sautéed in butter.

Oh, and give everything a generous crack of pepper. That always helps.
