Going Bowling

the bowl craze is nothing new and nothing surprising. Of course it makes sense for such a lazy trend to take hold - take tasty, fresh ingedients, throw them into a bowl, it's a no brainer. 

Here's a quick recipe for a bowl that I ate four times in one week. It's vegan, it's filling, it has avocado and my new favorite veggie, roasted cauliflower. I've been eating it cold, more like a salad than a hot lunch, but it's just as good warmed up. 

Black Rice and Roasted Cauliflower Bowl 

Base: 

Black Rice (a superfood!) 

Roasted Cauliflower (chop cauliflower, roast at 400 degrees until it's a bit carmelized. It's going to take longer than you'd think let it get nice and toasty, a little on the burnt side)

Toppings: 

Cilantro, Lime, Radish, Avocado, Sriracha
