ok, so disclaimer. I can't give you the recipe for the paella. Not because I'm protecting a secret, but because I don't know the secret. A Spanish friend who learned to make a paella on the grill during summers in Asturias, got the idea to translate it to a backyard fire pit and I dutifully volunteered my backyard and fire pit (which is nothing more than some cinderblocks and a system that is almost definitely illegal in Coral Gables). 

I'm sure that you can find a very decent paella recipe on the internet. And now I've planted the seed for the backyard coal pit as your oven, so you're welcome for that. 

I can say that if youre recipe doesn't involve making a fish broth using cheesecloth and shrimp and lobster shells, your recipe is nothing. If you don't need both Spanish saffron and saffron powder, find another recipe. If you can't find fresh mussels, we used clams. If you don't have to visit both Delicias de España and Whole Foods, you probably aren't doing it right. Oh, and if you can recommend me a nice fish market, you're invited to the next backyard paella night.
